Enchiladas Rub
Enchilada rub for chicken enchiladas

Chicken Enchiladas: Preheat oven to 350 degrees. Heat 10-12 taco sized torillas on a griddle, about 30 seconds per side. Set aside. Shred a rotissorie chicken and sprinkle rub generously on meat, mixing into chicken as you go. Pour in part of a large can of enchilada green sauce, leaving some to pour over later. Add 2 cups of shredded cojack cheese. Mix well. Fill and roll tortillas with this mixture and place ea. in a 9x14 baking dish. Pour over rest of green sauce. Top with 1 cup of cojack cheese. Bake for 30 minutes until bubbly and cheese is lightly browned. Serve with sour cream, lime wedges, salsa, cilantro.
