Rib Rub is sold separately, not part of the kit.
Complete with brine, rub and BBQ sauce mix that you add water and ketchup to make. That's right! Make your own homemade BBQ sauce quickly and easily. So much better than store bought. Comes with an empty bottle for sauce storage. Finished sauce will keep up to 2 weeks in fridge.
Add water to the brine and refridgerate overnight.

Part I - Brine: about 27 oz. (contains 1 recipe of pork butt brine) Ingredients: Pickling salt, brown sugar, cream of tartar.
Directions: The Night Before Smoking/Roasting: Mix entire packet in 2 quarts bottled water, till disolved. Place 6 - 8 lb. pork butt/shoulder in glass or plastic container. Pour brine over to cover completely. See Part II packet for next step.
Part II - Rub: 2 oz. Ingredients: Cumin seed, fennel, celery seed, coriander seed, all toasted, smoked paprika
Directions: Smoker Day: Rub on all sides of an already-brined pork butt/ shoulder. Rub yellow mustard over roast. Sprinkle on more rub, if you like. Place in smoker, preheated to 225 degrees. Smoke 14 hours if roast is boneless, 16 hours if roast has a bone. Next place on a rack with 1/2” water in a slow cooker on Low for 6-8 hours. Twist with a large fork to determine if it will pull easily. It should break apart effortlessly. If not, leave it a while longer.
Best if smoked, however can be roasted in the oven or slow cooked in a crock pot.
Part III - BBQ Sauce Mix: 7 oz (makes 16 oz. BBQ sauce-comes with container for the finished sauce.) Ingredients: Brown sugar, apple powder, honey powder, powdered butter, powdered vinegar, powdered Worcestershire, chicken base, cumin, ground mustard, ground parsley, ground ginger, smoked salt, onion powder, red pepper flakes, cinnamon, Greek seasoning, ground cloves.
Directions: In a medium saucepan, add 1 cup ketchup, 1 cup broth & 2 oz. white wine (optional) to the mix. Bring to gradual boil and simmer on low for 1 hour, reducing by 1/3. Stir occasionally to keep from sticking. Serve on pulled pork, ribs, chicken or any barbequed meat. Keep finished sauce in the refridgerator for 1 week.
